Chicken Creole

Is that the sound of saints marching in? No! Its your tummy who by the way has a taste for some good ole southern cooking. Now your challenge is to cook something hip & healthy so you can later take that shirt off for Mardi Gras without embarrassment. Now for only 190 calories, 16g of protein, 4g of fat and 23g of carbohydrates you can enjoy a serving of this French Quarter style meal in your very own home. Check out this clever recipe that serves 8.

INGREDIENTS

- 1 Tbsp canola oil
- 4 medium boneless, skinless chicken breast halves, but into strips
- 1 14oz can tomatoes undrained
- 1 8 oz can tomato sauce
- 1 cup chopped green bell peppers
- 1/2 cup frozen cut okra
- 1/2 cup chopped celery
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 Tbsp basil
- 1 Tbsp parsley
- 1/4 tsp red pepper
- 1/4 tsp salt
- 1 2/3 cups steamed rice

COOKING DIRECTIONS

Heat the oil in a large skillet and saute the chicken about 5 minutes on
each side.

Add the remaining ingredients and simmer for 20 minutes. Serve over 1/3
cup steamed rice.
